{ gluten free & vegan sweet potato burgers }

vegan & GF sweet potato burgers. // recipe makes about 2 medium sized burgers.

1 medium sweet potato, baked
about 1/3 cup GF flour, I used cashew meal and worked great
garlic salt
rosemary
oregano
salt & pepper
drizzle of agave syrup
you can use white kidney beans but I just put in a bit of hummus for texture
tomato, avocado, grilled onions or whatever you like on your burgers
lettuce to wrap the burgers in

bake a sweet potato and mash together in a bowl. add your 1/3 cup flour and your spices to taste and mix. drizzle in the agave for a bit of sweetness. add in some mashed white kidney beans or just a spoonful of hummus to keep it all together. mix everything and form your patties. coat in cashew meal to keep the patty together. since you aren't coating it in egg make sure you cover the entire thing. sear the patty on medium heat and cook in olive oil.
cook until brown or whenever you looks good. wrap in lettuce with tomato, avocado, grilled onions or whatever toppings you prefer. add salt & pepper and enjoy! //note : these do kind of fall apart when you eat them but it doesn't take away from the flavor!
